Job Description

3fe is seeking to hire a Food Operations Manager to oversee our food offering at our six locations. This will entail the running of our prep kitchen on Pearse Street as well as the day to day running of three service kitchens at our other locations. They will also be responsible for the food offering at our other take away shops. 

The food offering at 3fe has always had a focus on fresh, approachable and tasty offerings that are prepared in-house where possible. It is vital that there is a balance struck between:

  • What we find interesting to make and produce

  • What customers want to buy

  • What can provide a sufficient margin

We are keen to build on our existing systems so that our food operations are controlled, transparent, interesting, evolving and profitable.

Job Description

  • The business is a 7 day a week operation across all locations and thus will require weekend shifts

  • Manage production and delivery of retail food to all 3fe locations, including development of new products

  • Manage production and delivery of service food to all 3fe locations with kitchens (currently Five Points, Grand Canal Street and Gertrude)

  • HACCP - continue to improve and monitor HACCP systems at all 3fe locations. Kitchtech cloud based software is utilised at all locations.

  • Ensuring correct stock rotation procedures are followed in production kitchen and at all locations

  • Liaising with front of house staff on food offerings, new product lines and seasonal promotions.

  • Kitchen management and maintenance.‚Äč

Qualifications Requested Person Specification A self motivated person who is ambitious about the quality and scope of food that can be produced all in the context of a casual and approachable environment. Experience managing a variety of kitchens and menus. Proven experience as a Head Chef having worked in a high-volume establishment / restaurant. Capable of leading, motivating and controlling a large team of kitchen staff across a number of locations. A bent towards action and capable of adopting new software, techniques and systems to create an efficient food operation. A strong grasp of margins, sourcing and efficient work practices. The successful applicant will have a focus on growing the food reputation at 3fe as a collective team. The ability to create a positive work environment that fosters good communication, creativity, efficient work, accountability and has a progressive attitude towards all staff, customers and suppliers. The right applicant will work exclusively with 3fe.
