I run a castle outside Thurles in County Tipperary called Lisheen Castle, it's not a hotel, it's a luxury rental property with 9 bedrooms. American family groups rent the castle on a weekly basis Saturday to Saturday, sometimes on a self-catering basis and sometimes on a catered basis. The number of guests staying is usually between 10-16 persons. I usually have about 10 weeks catered during a season.

The guests who stay are all Americans, they are very nice appreciative people and they are simply looking for good tasty traditional Irish food cooked and prepared well, per night we offer a choice of 2 starters, 2 mains and 2 desserts. We take the food orders at dinner each night for the following evening so we know exactly how many guests are having each dish to shop without waste. 

For breakfast we offer a traditional Irish breakfast with porridge, home cooked scones and pancakes etc, it's a very personal experience with the guests, you would be dealing with the same guests each day for a week and would have some interaction with the guests.

The cook does the shopping in the local shops/supermarkets after breakfast or during the day, does the cooking and is supported by one other for breakfast and 2 service persons for dinner. The cook needs their own transport as we are located 10 minutes from our local town of Thurles.

The person I'm looking for must have a passion for food, must really want to delight the guests, be cost aware, be organised and clean in the kitchen, this is a part time postion and may suit someone semi retired who doesn't wish to work full time or somebody looking for a new challenge.
