Key Responsibilities:
- To prepare food from seasonally changing menus
- To maintain the day-to-day operational standards of the kitchen.
- To manage own kitchen section during service
- To take on responsibilities covering all areas of kitchen’s operations
- To control stock and maintain orders
- Training junior members of staff
- To maintain required levels of food safety and hygiene at all times
Requirements:
Have at least 3 years experience in a 3 rosette or higher establishment. With at least 2 years at Chef de Partie level our above.
Chef’s training of NVQ level 3 or equivalent.

- Prepare mis en place for section
- Keep stock of mis en place for own section at the agreed levels
- Prepare food for guests in accordance with the menu as required, and within the agreed time scale
- Manage own section during service
- Maintain required standards of food safety and hygiene at all times
- Product knowledge, quality control
- Knowledge of recipes for all menu items
- Knowledge of required stock levels
- Customer Service – able to be adaptable and produce food as and when required for to meet guests needs.
- Self management and management of others.
