We are urgently looking for someone to replace one of our assistant cooks to work with the rest of our team in the kitchen here in Sicily from the end of June until the end of October.

"Rocca delle Tre Contrade" is a luxury villa in Sicily catering for "high maintenance" guests from a multitude of backgrounds and nationalities, and is owned and run by former 12 week students from Ballymaloe.

The right motivated candidate will be taking responsibility for breakfast and lunch service, and generally helping out with managing stock provisions and improving our menu selection and recipe repertoire. Both breakfast and lunch are buffet-type meals with a generous display of varied Sicilian and continental fare, warm and cold. We often have guests with allergies and/or dietary requirements.

Two local cooks will do morning shifts with you, as well as our brilliant chef Dora who makes dinner and who will be happy to share some of her expertise if you are also willing to spend some of your spare time in the kitchen in the evenings.

We generally have up to 24 guests full board all through the summer, it can both be hectic but rewarding at the same time working so close with our guests.

In September and October we will host a retreat with Michelin star chef Merlin Labron Johnson and another with focus on the Sicilian wine harvest.
