About the Role
We are seeking a skilled and motivated Second Chef (Sous Chef) to support the Head Chef at Shore Hotel, a newly refurbished, independently run 5-bedroom hotel located just off the NC500 in Balintore.
With a 50-cover restaurant, 20-cover bar, and seasonal takeaway, Shore focuses on delivering fresh, high-quality dishes using produce from our nearby farm and locally landed seafood. You will play an important role in maintaining these standards and helping bring the story of our ingredients to life for our guests.
Key Responsibilities
- Support daily kitchen operations and service
- Prepare, cook and present dishes to a high standard
- Assist with menu development and seasonal updates
- Step up to lead the kitchen in the Head Chef’s absence
- Monitor stock, ordering and deliveries
- Maintain food quality, consistency and portion control
- Ensure food safety, hygiene and cleanliness standards are met
- Support, train and supervise junior kitchen staff
- Contribute to showcasing the provenance of ingredients through dishes
- Qualifications Requested
- Skills & Experience • Experience as a Sous Chef • Strong leadership, communication and organisational skills • High standard of cooking across multiple sections • Ability to work under pressure in a fast-paced environment • Knowledge of stock control and kitchen systems • Food safety certification • A genuine interest in local produce and food provenance
